2013 Verano Turbo-how are different torque maps triggered?

I have a race car using a 2013 Verano Turbo engine and ECM and it would be great to access the different torque demand maps in the ECM for different track conditions. Does anybody know how I could get the ECM into the different torque maps? What if I convinced ECM the car was in reverse? How about the ambient temp sensor to make it think it's really cold? On cruise control?

A race engine ECM would need remapping to suit the engine spec.

The temp sensor mod is the old 10p resistor sold as a 200 tuning chip.

It's not a race ECM, it a 2013 Buick Regal ECM. Besides, it is a race car but the engine is completely stock so there is no need to remap anything, I just want to know how to activate the different torque maps that exist in the stock ECM
