Is it possible to modify the Escalade and give it a dual-range transfer case and locking rear differential and other off-road tools like on the Tahoe and other SUVs?

Why not? Anything is possible. That would be a relatively easy swap as far as I can tell.

I don't see why not, but if you want to do any serious off roading you should consider a shorter wheelbase vehicle that you can (and will need to ) turn around in tight spaces and not be too wide that you will be forever pinstripeing it.
